Welcome to Bella Sourdough - made for bella, baked for all.
Hi, I'm Giovanna – baker, mum, and founder of Bella Sourdough.
What started as a home experiment (involving flour-covered benches and lots of trial and error) quickly turned into a passion—and now, a microbakery that feeds families across our community.
If you’ve ever had a loaf of sourdough that made you pause mid-bite and go “woah”, that’s what I’m aiming for.
This bakery is run by me—with my daughter often watching or taste-testing (she’s got strong opinions!). Every loaf is shaped by hand, fermented slowly, and baked with love from my home kitchen using traditional methods and top-quality local ingredients.
I am originally from Spain and my roots shape everything I bake in my microbakery. I use heritage grains such as tritordium, an incredible cereal grain from Spain (but grown locally) known for its digestibility and nutty flavour.
What We Believe In
At Bella Sourdough, we:
✔ Believe in real food – no additives, no shortcuts.
✔ Embrace slow fermentation for better taste and gut health.
✔ Support local and organic ingredients where possible.
✔ Aim to reduce waste by baking to order.
✔ Bake in small batches, with quality over quantity at the heart of everything we bake.

What Makes Our Bread Different?
All our sourdough is:
✔ Naturally leavened using my homemade 100% hydration sourdough starter (aka Mirabella) – no commercial yeast.
✔ Cold-fermented for 24+ hours for deep flavour and digestibility.
✔ Made with 100% Australian flour, locally grown and milled to order.
✔ Vegan-friendly (unless we’re baking something cheesy or chocolatey!)
✔ I don’t bake every day. I bake for flavour, for feel, and for families.
My menu is small and seasonal. When something’s gone, it’s gone!!!
